Shelf Life: About 1 week (refrigerated) | Yield: Approx 16 oz

Ingredients:

  • 1 cup (240ml) water 
  • 1 cup (200g) granulated sugar
  • 1 packed cup fresh basil leaves (the fresher the better)
  • 1 tsp high-quality matcha powder (don't skimp here)

Instructions:

  1. The Basil Spa Treatment (Optional but Worth It) - Blanch those basil leaves for just 10 seconds in boiling water before plunging them into an ice bath. This simple step locks in that Instagram-worthy green that'll make your drinks pop.
  2. The Sweet Foundation - Combine water and sugar in a saucepan over medium heat, stirring until sugar dissolves completely. Lower the heat, add the basil leaves, and let them simmer for 2 minutes before removing from heat.
  3. The Color Extraction - Transfer everything to a blender and give it a 30-second whirl. This aggressive approach forces maximum color and flavor from the basil. Strain through a fine mesh sieve into a clean jar.
  4. The Matcha Moment - Create a mini-paste by whisking matcha powder with a tablespoon of warm water. This prevents the clumping that can make your syrup look amateur. Stir this vibrant mixture into your warm syrup.
  5. Cool & Bottle - Let it cool completely before bottling. This one's a bit more delicate, so it'll keep for about a week in the refrigerator.

Pro Swap: Not into matcha? Substitute ¼ tablespoon of Chlorella powder directly into the warm syrup for a different but equally impressive green. Skip the step of whisking into water and pour directly into warm simple syrup.

  • ½ cup dried hibiscus flowers (which we have available here)
  • ½ cup fresh strawberries, hulled and sliced
  • 2 tbsp dark cocoa powder
  •  ½ tsp citric acid (optional, but helps retain color and brightness)

Instructions:

  1. Start With Sugar Alchemy - In a saucepan over medium heat, combine water and sugar. Stir until fully dissolved and slightly shimmering.
  2. The Crimson Infusion - Add those hibiscus flowers and strawberries to the pot. Watch the transformation begin as the liquid turns a vibrant red. Simmer for 5 minutes, occasionally stirring as the colors bleed and intensifies.
  3. Whisk In The Cocoa Powder  - Remove from heat and immediately whisk in the cocoa powder until velvety smooth. This is where the magic happens – the cocoa adds depth without overwhelming the floral notes. Stir in that citric acid (if using) to lock in color and add subtle brightness.
  4. Steep & Strain - Allow the mixture to steep for about 10 minutes. Your patience will be rewarded with intensified flavors. Strain through a fine mesh sieve to remove solids. 
  5. Bottle That Beauty - Let it cool completely before bottling. Store in the fridge for up to 2 weeks
